Swiss Chard Vegetable Stew







Swiss greens have so many vitamins such as A, C and antioxidants loaded inside. There is nothing like a bowl of collard greens and cornbread on a special occasion.  Most African American homes eat collard greens and cornbread with black-eyed peas. 

What's the difference between preparing west African stew and collard greens? If you compare how the meals are prepared; the two are somewhat alike and slightly different.  I have seen my mom start with bacon and onions, then add the collard greens to cook up to an hour. With the African vegetable stew fish, or assorted meat could be added with the greens.
  
With most West African stews, the meal preparation begins with palm oil and onions, blended tomatoes and red bell peppers cooked to a blended tomato sauce. One slit difference is the number of meats beef, goat or fish and spinach at the end.  My choice would be to eat fufu, plantain, rice or pounded yam with this stew. Lastly,  you can have both meals. There is no wrong or right way of cooking a special meal. The most important thing is sharing the love of cooking with your family once again. Happy cooking!



Recipe: African vegetable stew with red potatoes 

Swiss chard greens 3-bushel
1/2 white onion
3 to 4 small garlic cloves
1 tomato
all season to taste
garlic seasoning to taste
